{"id":629,"date":"2011-08-15T07:31:56","date_gmt":"2011-08-15T11:31:56","guid":{"rendered":"http:\/\/daringdrake.com\/?p=629"},"modified":"2011-08-15T07:37:28","modified_gmt":"2011-08-15T11:37:28","slug":"seaberries-duck","status":"publish","type":"post","link":"https:\/\/daringdrake.com\/wordpress\/seaberries-duck\/","title":{"rendered":"Seaberries &#038; Duck"},"content":{"rendered":"<p>\u00a0In our blog archive, July 2010, Tim &amp; Sally Eller provided a recipe for <strong><a href=\"http:\/\/daringdrake.com\/2010\/07\/\" target=\"_blank\">Roasted Cod with Chanterelles and Seaberries<\/a>.<\/strong><\/p>\n<p><em>Created by\u00a0CSA member Tim Eller:<\/em><\/p>\n<p><strong>Seared Duck Breast with sea berry sauce<\/strong><\/p>\n<p>Sea berries are a chef\u2019s challenge.\u00a0 They are extremely astringent, but also very flavorful.\u00a0 Also unusual enough that it is hard to find reasonable sounding recipes.\u00a0 Here is my second attempt at a solution.\u00a0 It is very loosely based on duck la orange. \u00a0It really works.\u00a0 Serve on warm plates, with a spoon to scoop up the sauce.<\/p>\n<p>4 duck breast fillets, skin on<\/p>\n<p>\u00bd pint of fresh Daring Drake sea berries<\/p>\n<p>2 tbs maple syrup<\/p>\n<p>2 tbs Daring Drake plum jam<\/p>\n<p>Sprig of thyme (or \u00bd tsp dried)<\/p>\n<p>1 cup of chicken stock (or veal, or duck, or Thai)<\/p>\n<p>2 tsp soy sauce<\/p>\n<p>2 tbs butter<\/p>\n<p>Pinch of salt<\/p>\n<p>1 tsp arrowroot starch<\/p>\n<ol>\n<li>Zap the sea berries in a blender, briefly.\u00a0 Run the result through a fine sieve, pressing the pulp to recover as much of the juice as possible.<\/li>\n<li>Preheat oven to 175.\u00a0<\/li>\n<li>Simmer the sea berry juice, maple syrup, plum jam, thyme, and stock for about 30 minutes, until starting to thicken.\u00a0 Add salt and soy sauce. \u00a0Swirl in cold butter.\u00a0 Set aside.<\/li>\n<li>Sear duck breast in hot saut\u00e9 pan (hopefully a non-stick pan).\u00a0 Sear skin side first, for 5 to 7 minutes, without moving.\u00a0 Flip and sear other side for 1 or 2 minutes.<\/li>\n<li>Move duck beast to a warm plate, and put in 175 degree oven for about one hour.<\/li>\n<li>The duck will exude a lot of juice.\u00a0 When it\u2019s nearly done (instant thermometer in thickest part reading 135), pour off the juice and add it to the sauce.\u00a0 Bring to a slow simmer.\u00a0 Mix the arrowroot with a little cold water, and rapidly stir it into the sauce.\u00a0<\/li>\n<li>When duck is ready, slice on the diagonal, dress with lots of sauce, and serve.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>\u00a0In our blog archive, July 2010, Tim &amp; Sally Eller provided a recipe for Roasted Cod with Chanterelles and Seaberries.
