The Chanterelles give it an airy tartness reminiscent of <\/span><span style=\"font-size: 12pt; font-family: &quot;Times New Roman&quot;,&quot;serif&quot;;\">apricots, and the Seaberries stand in for the tartness of lemon juice. We did this with the first <\/span><span style=\"font-size: 12pt; font-family: &quot;Times New Roman&quot;,&quot;serif&quot;;\">golden chanterelles of the year, which were extraordinary. (They were collected from our secret <\/span><span style=\"font-size: 12pt; font-family: &quot;Times New Roman&quot;,&quot;serif&quot;;\">spot in the Finger Lakes National Forest on July 22, 2010.)<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; line-height: normal; mso-layout-grid-align: none;\"><span style=\"font-size: 12pt; font-family: &quot;Times New Roman&quot;,&quot;serif&quot;;\">\u00a0<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; line-height: normal; mso-layout-grid-align: none;\"><span style=\"font-size: 12pt; font-family: &quot;Times New Roman&quot;,&quot;serif&quot;;\">The Seaberry juice is easy\u2026zap 1\/3 cup of fresh berries in the microwave; then run the batch <\/span><span style=\"font-size: 12pt; font-family: &quot;Times New Roman&quot;,&quot;serif&quot;;\">through a fine sieve. Add mushrooms and saut\u00e9 until beginning to color. Stir in garlic and parsley. Add wine; <\/span><span style=\"font-size: 12pt; font-family: &quot;Times New Roman&quot;,&quot;serif&quot;;\">simmer until almost evaporated, scraping up browned bits in skillet, about 1 minute. Remove<\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin: 0in 0in 0pt; line-height: normal; mso-layout-grid-align: none;\"><span style=\"font-size: 12pt; font-family: &quot;Times New Roman&quot;,&quot;serif&quot;;\">from heat. Stir in Seaberry juice. Bake until fish is opaque in center, about 10 to 12 minutes.
